STEAK PERFECTION TAKES TIME
The meat of the Gaucho steak comes exclusively from young bull calves,
which feed freely on the tender grass of the Argentine pampas on daily basis.
The right humidity, the mild climate, the rich soil and extensive landscape
make the pampa perfectly suited for raising cattle of the highest quality.
The Argentine beef is unique because the cattle feed grass instead of grain.
Grain-fed cattle have more fat and while some steak lovers appreciate that,
we believe that good steak should not be defined by fat content, but rather by taste.
More movement
Argentine cattle get more exercise and eat up to 100 different types of grass.
As a result, the beef not only has a better taste, but also contains 10% less cholesterol and 25% less fat.
Although not all Argentine beef is classified as organic,
the cattle live on grassland where almost no fertilizers or pesticides are used.
This makes the beef 100% natural.
However, not all Argentine cattle have the same high quality.
Areas near the sea or where wine is produced are less suitable for keeping livestock.
The region for highest beef production is Las Pampas.
Gauchos selects its Aberdeen Angus beef from this region.
Transportation
The meat is not frozen, but vacuum-packed and shipped refrigerated.
This allows it to mature without losing valuable moisture.
The journey from the pampas to our restaurants takes four to six weeks.
During this time, the meat reaches its optimum taste.
During preparation in the restaurant, salt and chimichurri oil are added to the beef.
The beef is then put on the grill and turned only once.
This successful process has been applied unchanged for almost 46 years now.
